He looks for the optimal ripeness of the grapes before starting the harvest; he also adopted techniques from Burgundy like punching of the cap and stirring of the lies to get optimal concentration. His wife Murielle personally supervises the care of the vineyards: pruning adapted to each vine, systematic thinning, green harvest to purposely limit the number of bunches on the vine.
